Borroso Mezcal is crafted by Casa Cortés in the mezcal heartland of Santiago Matatlán, Oaxaca, under the expert guidance of Maestro Mezcalero Francisco Cortés Hernandez. This artisanal mezcal is made from 100% Espadín (Agave angustifolia) plants that mature between 6 to 12 years, ensuring optimal flavor development. The agave is harvested when at least 60% capón, indicating its maturity and readiness for distillation.
The production process is steeped in tradition and craftsmanship. The agave hearts are slow-cooked in conical earthen pit ovens using oak, then milled using a traditional stone tahona. The juice is naturally fermented in open-air wood vats known as tinas, and double-distilled in copper pot stills to create a spirit with depth and complexity.
Borroso Mezcal offers a nuanced aroma with subtle smokiness complemented by vegetal ripeness and floral undertones. On the palate, it reveals a harmonious balance of bright acidity and 45% ABV, with layers of flavor including lemongrass, damp earth, delicate fruit, and a rich clay/mineral essence.
