Borroso Mezcal is crafted by Casa Cortés in the mezcal heartland of Santiago Matatlán, Oaxaca, under the expert guidance of Maestro Mezcalero Francisco Cortés Hernandez. This artisanal mezcal is made from 100% Espadín (Agave angustifolia) plants that mature between 6 to 12 years, ensuring optimal flavor development. The agave is harvested when at least 60% capón, indicating its maturity and readiness for distillation.

The production process is steeped in tradition and craftsmanship. The agave hearts are slow-cooked in conical earthen pit ovens using oak, then milled using a traditional stone tahona. The juice is naturally fermented in open-air wood vats known as tinas, and double-distilled in copper pot stills to create a spirit with depth and complexity.

Borroso Mezcal offers a nuanced aroma with subtle smokiness complemented by vegetal ripeness and floral undertones. On the palate, it reveals a harmonious balance of bright acidity and 45% ABV, with layers of flavor including lemongrass, damp earth, delicate fruit, and a rich clay/mineral essence. It boasts a rich body and a silky texture that lingers on the palate.

At 45% ABV, Agave de Cortés stands as a distinguished expression of 100% Espadín agave, epitomizing the mezcal tradition of Santiago Matatlán. About Brewery

Agave de Cortes

The Cortés family has been growing, foraging, and distilling the maguey in the Zapotec town of Santiago Matatlán for close to 200 years. The family is the driving force behind the award-winning mezcales of El Jolgorio and Nuestra Soledad and is considered by many to be mezcal royalty.

Santiago Matatlán is situated 30 miles southeast of Oaxaca City and is the gateway to the Oaxacan highlands: mezcal country! From this central location, Rolando Cortés and his family collaborate with like-minded mezcaleros from the mountains and valleys of Oaxaca. The unifying message behind this collection of mezcales is simple though demanding: Respect the land, honor the tradition, do it for the love, and the rest will take care of itself.
