This wine undergoes a unique process: macerated in open-top bins for 30 to 60 days, with tanks sealed with CO2 to allow extended maceration without oxygen. Once the tannins reach optimal softness, determined through daily tastings, the grapes are pressed and settled in stainless steel for 24 hours, followed by 6 months of aging in French oak and acacia barrels.
