Milan Nestarec describes his Forks & Knives Red as an everyday wine, a staple that should grace every table, much like daily bread and butter. Designed to be approachable and unpretentious, this wine doesn't demand complex analysis or high-brow terminology. The inception of the Forks & Knives range in 2014 was serendipitous, with the collaboration of Fleur Godard, a French importer, and Justine Saint Lo, an illustrator with roots in Loire Valley winemaking. Justine's captivating labels perfectly encapsulate the wine's essence: a delightful, everyday wine fit for any meal and occasion.

Crafted from a blend of Blaufrankisch, St. Laurent, and Pinot Noir grapes, the wine originates from a diverse mix of Moravian vineyards, including Slovenské, Stará hora, and Sahary, with vines aged 20 years and older. The grapes are hand-harvested, meticulously sorted, and destemmed without crushing to ensure gentle extraction. Spontaneously fermented in tanks for 11 days, each variety is then left on its skins for an additional 4 weeks. The wine matures in large neutral barrels for approximately 17 months, allowing it to settle naturally. With no sulfur added and no fining or filtration, this wine is a pure expression of its terroir.

About Winemaker

Milan Nestarec

Located in Velké Bílovice, Moravia, Nestarec Winery spans 24 hectares of organic-certified vineyards, managed with regenerative agricultural practices. Under the guidance of Milan Nestarec and his family, the estate produces approximately 75,000 bottles annually, showcasing varieties like Gruner Veltliner, Neuburger, and Pinot Noir. Embracing minimal intervention, the wines undergo spontaneous fermentation with wild yeasts and see little to no sulfur, highlighting the region's loess, clay, and sandy soils.

Milan's winemaking journey began early, taking charge of the cellar at just 16. Over the years, influenced by global natural winemakers, he transitioned the estate to organic viticulture and adopted a low-intervention approach. Today, Nestarec wines are celebrated for their authenticity, expressing Moravia's unique terroir and Milan's unwavering commitment to quality and innovation.
