Milan's Philosophy on Wine: "Wine should be as everyday as bread and butter. I craft wines that are affordable, approachable, and perfect for any meal. Forget the wine jargon; my wines are for sipping, not scrutinizing. The Forks & Knives range, launched in 2014, embodies this. After meeting Fleur Godard, my French importer, and Justine Saint Lo, an illustrator, we had a revelation: Justine's artwork perfectly captures our wine's easy-going spirit."

Vineyards: Grapes come from organic plots with Loess, sand, and clay soils in Zadní Hora, Přední Hora, and Úlehle, all aged 25 years and up.

Winemaking: Hand-harvested grapes are sorted, destemmed, and undergo an overnight skin maceration. After gentle pressing, they ferment spontaneously with native yeasts for 40 days in tanks. The blend then ages in large neutral barrels for 17 months without sulfur, fining, or filtration.

Sip on this! It's good for you because...

About Winemaker

Milan Nestarec

Located in Velké Bílovice, Moravia, Nestarec Winery spans 24 hectares of organic-certified vineyards, managed with regenerative agricultural practices. Under the guidance of Milan Nestarec and his family, the estate produces approximately 75,000 bottles annually, showcasing varieties like Gruner Veltliner, Neuburger, and Pinot Noir. Embracing minimal intervention, the wines undergo spontaneous fermentation with wild yeasts and see little to no sulfur, highlighting the region's loess, clay, and sandy soils.

Milan's winemaking journey began early, taking charge of the cellar at just 16. Over the years, influenced by global natural winemakers, he transitioned the estate to organic viticulture and adopted a low-intervention approach. Today, Nestarec wines are celebrated for their authenticity, expressing Moravia's unique terroir and Milan's unwavering commitment to quality and innovation.

So..What's natural wine again?

  • No synthetic molecules in the vines
  • Plowing or other solutions to avoid chemical herbicides
  • Use of indigenous yeast
  • Handpicked grapes
  • Low to no filtering
  • Low to no sulfites
  • Winemaking that respects the grapes: no pumping or rough handling
    of the grapes
  • no micro-oxygenation

Not all of our wines are natural; some are simply organic or sustainable.
However, they're all delicious and good for you!
