Mars Rosato

Winemaker’s note: “This is a textured and richer sparkling Merlot Rosato made with 3-days of whole-cluster maceration. A fall rosé sparkler, if you will.”

Located in the picturesque North Fork of Long Island. Sourced from the sustainable North Cliff vineyard, this wine is a true expression of its terroir, reflecting the unique character and quality of the region.

The making of MARS involves a thoughtful and meticulous process. The Merlot grapes undergo whole-cluster maceration for 3 days before being gently pressed into stainless steel tanks. Aged for 10 months without any racking or stirring, the wine is bottled with a small 10ppm SO2 dose and a touch of 12g/L wildflower honey to add natural bubbles, creating a unique and delightful sparkling experience.

In the glass, MARS reveals inviting notes of cherry and raspberry, complemented by a hint of granite. It's a wine that captivates the senses, offering a perfect balance of fruit-forward flavors and mineral complexity.
