Vineyard:Marl and silty-clay soils at an elevation of 300 meters. The grapes are sourced from a selection of estate-owned vineyards, all of which are biodynamic- and organic-certified.
Winemaking: The grapes are carefully hand-harvested in small crates, with a maximum weight of 19 kg, to preserve their integrity. Upon harvest, the grapes are immediately pressed in a pneumatic press, and the finest portion of the must is transferred to temperature-controlled vats to begin alcoholic fermentation, utilizing only indigenous yeast. The wine is vegan-friendly, fined, filtered, and a minimal amount of sulfur is added prior to bottling.
Personality: Just like the elegant lady adorning the label, this wine is both refined and attention-grabbing. It boasts a straw yellow hue with green highlights and offers an intense floral bouquet of orange blossom and chamomile. Fresh, fragrant, light, lively, and persistent, it is best served well-chilled and pairs beautifully with a wide variety of dishes or can be enjoyed on its own.

Nestled in the heart of Gavi in Piedmont, L’Azienda Vitivinicola Castello di Tassarolo is a 17-hectare estate surrounded by vineyards, run by the passionate Massimiliana Spinola. The estate cultivates a variety of vines, including Cortese di Gavi, Barbera, and some Cabernet Sauvignon. The Spinola family has called the Tassarolo castle home for generations, crafting wines from these vineyards since the 14th century. In 2006, under Massimiliana's stewardship, the estate began transitioning to biodynamic viticulture, emphasizing a deep respect for nature and the environment.
Henry, Massimiliana's former partner and a London native, pioneered the use of working heavy horses in the vineyards of Northern Italy. Collaborating with experts in the field, Henry designs and develops draught equipment tailored for biodynamic farming methods. With a deep-rooted passion for Rudolf Steiner's philosophies spanning over two decades, Henry offers courses on the theory and practice of utilizing heavy horses in vineyards, forests, and fields. He is also in the process of developing a nationally recognized certification program to promote heavy horse work in Piedmont.
In the winery, Massimiliana collaborates closely with their enologist, Vincenzo Muni. Together, they have perfected a method for crafting white wines without the addition of sulfur and without oxidative properties—a challenging accomplishment in the realm of Natural Winemaking. They credit much of their success to the health of the soil and grapes nurtured by their biodynamic practices.
The estate has been certified organic (Bios) since 2006, biodynamic (Agri BioDinamica) since 2007, and is also USDA Organic and Vegan certified.
