How it's made: Grapes get hand-picked and sorted out in the vineyard. They take a gentle stomping and hang out in the mix for about 10 days. Come summer, it's bottled up, no fining, filtering, or added sulfites.

Picture this: a bunch of Alsatian growers, led by the grape guru Christian Binner (who's been rocking the wine scene for over 20 years), decided to shake things up. Tired of seeing their awesome organic and biodynamic grapes getting lost in anonymous coop blends, they said, "Why not make wines that truly reflect our terroir and soul?" And so, Pirouettes was born!
These rebels work with a vibrant palette of local stars like Auxerrois, Pinot Gris, Riesling, Sylvaner, Gewurztraminer, and Pinot Noir. And Alsace, with its sunny days and diverse soils ranging from granite to limestone, is the perfect playground for these winemaking wizards.
Here's the twist: each wine has a personal touch, with the winemaker's name proudly on the bottle, letting you know who's behind the magic. Whether it's a bubbly Pet-nat, a crisp Crémant, or a funky Tutti Frutti blend, they're all made with zero additives right in the winemaker's own cellar.
And guess what? They've got a new recruit! The Lycée Viticole de Rouffach, a winemaking school, has jumped onboard, recognizing the awesomeness of natural winemaking.
