About Winemaker

Cascina degli Ulivi

Stefano Bellotti, the visionary behind Cascina degli Ulivi, revolutionized biodynamic viticulture and challenged conventional winemaking practices since the early 1980s. His holistic approach has inspired a new generation of vintners and reignited interest in the Gavi region's white wines made from the Cortese grape.

Spanning 24 hectares of biodynamically farmed vineyards since 1985, Cascina degli Ulivi is a testament to Stefano's transformative work. Taking over a neglected family farm in the 1930s, Stefano transitioned to chemical-free viticulture and embraced the philosophies of Rudolph Steiner.

The estate is a thriving polycultural environment, focusing on the interconnectedness of vines, vegetables, livestock, and cereals. Stefano believed in the soil as a 'companion organism' and fostered harmony in all forces contributing to the vine's vitality.

Cascina degli Ulivi's wines are a pure expression of their terroir, fermented with indigenous yeasts and aged in large traditional barrels. Since 2003, Stefano eliminated filtration and sulfur additions to produce the most authentic representation of the land.

Despite conflicts with Gavi DOCG regulations, Stefano's commitment to his terroir led to the declassification of his wines, which gained recognition and respect based on their quality and authenticity.

Stefano passed away in 2018, leaving behind a legacy of innovation and a harmonious natural environment at Cascina degli Ulivi. His daughter, Ilaria, continues his work, ensuring that Stefano's energy and vision remain alive in every bottle.
